Didn't help. Not sure what else to do. If I unpair my watch do I lose activity info?
When you unpair the Watch the iPhone automatically creates a backup including the health data. You can choose that backup when you setup the Watch again.

In case you reset your iPhone and set it up as new or change your phone make sure you have an encrypted backup in iTunes (picture) so you don't lose your health data.

Just to be clear, your iPhone does NOT need to be on iOS 9.1 to update the watch to watchOS 2.0.1. I updated mine this morning without having updated the iPhone yet.

The problem of not being able to see the watchOS update also happened to several people when trying to update to watchOS 2.0 originally, and one of the solutions that was offered was, counter-intuitively, to turn off WiFi on the phone and check for the watchOS update again. For some people the update then appeared and they could turn WiFi back on to download the update in the usual way.

The only thing you will loose when unpairing is your calibration from workouts all the other data is saved in your backup. Not sure why Apple can't figure out how to save that too.

I basing what I posted on what I've read on Macrumours.com

https://www.macrumors.com/2015/10/21/apple-releases-watchos-2-0-1/

I'm not jail broken and have no reason to stay on 9.0 or 9.02

No worries. I was just making a correction as that information isn't true based on my experience. I just wanted to make sure people were aware they did not have to be on a specific version of iOS 9 in case they did not want to update to a later iOS version.
