Last year I had hoped to get space gray XS max but they did had any in stock on launch day Friday. But the very next day on Saturday they showed as in stock so I was able to quickly order it.

Chances are that it’s likely one of the ones that wasn’t picked up and after 24 hours it’s put back in stock open to public for grab. So even if you weren’t able to get one on launch day Friday, you could check on Saturday and see if they have any.
 
I've always wanted to do one of those lines outside the Apple Store for something, but I rarely buy on launch day and my nearest Apple Store is 70 miles away!
 
I walked into an Apple Store on launch day last year around 1-2pm and they had quite a few phones in stock, got the 256gb space gray max.. The only ones that were out of stock were the gold ones. Since this is seeming like such a milquetoast launch, another S iteration, I can imagine there will be plenty of stock of the usual colors on launch day.
 
I got my iphone 5 at the store. I remember getting there an hour or 2 before they opened. There was a line and I was only able to get white in the size I wanted but I was able to get out with one.

That's correct. But it also includes mandatory Apple Care so if that isn't something one wants, you'd have to buy outright or purchase through carrier.

It’s been relatively easy getting a new iPhone on launch the last several years. It’s just not as big as before during the iPhone 4 or iPhone 4S days.
