Really n00b question but here it goes...

Anyone know how to create a folder in Apple Mail in my mailbox to store emails that I dont want to keep in my Inbox but still want to hold for later?

In the side pane, choose "New Mailbox" from the options menu.

Then drag any message from your inbox to that new folder.
