If you are someone who considers the phone itself to be a long term storage for your digital imagery, then yeah 256GB maybe right for you since you would never offload any image off your phone, ever.
If you are even somewhat diligent about offloading images/ videos every few months to a mass storage solution (like a NAS RAID for long term storage of digital assets), then you can easily deal with 128GB. If you are really aggressive about offloading digital data regularly, and/or travel with a computer and a lightning cable, you can even make do with 32GB.
