Looked at a video today and realised that the always on of the S5 isn't the full colour version of the face that you normally see and that Apple have tuned the displays for always on and that only when fully lit up do you get the whole experience.

This is somewhat backed up by the screens shown on the site where you see monochrome or dark backgrounds transitioning to a lot of white when the screen is activated in the traditional way.

One thing I'm really keen on is getting more instant feedback when exercising and in particular swimming when tapping the screen to see lengths isn't that convenient. I'm super curious if you get much at all during exercise programmes when the screen is in dimmed mode.

What feedback do you mean? You will get everything you see now when you raise your wrist, it will just be dimmer until you raise your wrist. I think its a game changer for workouts, swimming, etc. But will have to see it in person to know for sure, how dim, etc. I think you have good points, just wasn't clear on what you're asking.
 
As I mentioned in another post, this might be an issue on a sapphire screen in direct sunlight as it is just about ok on the 4 so a glance at the dimmed screen on the 5 might be pretty useless in this scenario meaning you have to raise anyway, but all conjecture so we'll have to see real world examples.

Perfect, just what I was looking for and had missed in the keynote :)

It was this video where the watch screen clearly goes from dark watch face full screen white when woken that made me wonder about the differences between dimmed and non dimmed mode.
