So current consoles only support 720p(native), but if you connect a 1080p display the console just scales up, which is not real fullHD.
Now i have a projector with 720p(HDready) which currently gives me a brilliant picture with a diagonal of 1,70meters.

The new consoles will support native 1080p, how will that affect me? Will i even notice better graphics with a lower resolution? Or might i even have issues like not that sharp fonts?

No, current consoles do support 1080p.
I think the Xbox 360 menu might be in 720p since it looks awful on a 1080p display but there are games that run in full HD. I think there are more on PS3 that run in 1080p.

I have a 720p projector setup as well - I don't think you'll have a hugely downgraded experience not having 1080p. I think it will be similar to movies. I'm quite happy with the quality of video that I'm seeing on my projector setup and its only 720p. It retains high fidelity even at a 150 inch screen size.

It's all about the color rendition of your projector and how well it scales to the projector's resolution.

I had an Epson XGA (1027x768) years ago - scaling and color were just so-so.

I now have an NEC XGA and it is just awesome. 1080 looks a bit better as it is easier to scale down than trying to scale up 720. The content I played on the Epson look awesome on the NEC.

I have a friend that has an old NEC SVGA (800x600) and the color rendition on that is incredible so pics on that are great as well.

I also have a budget Acer SVGA and it is an all around so-so - but that one was only $328 shipped from Amazon.

He probably means contrast ratio, color gamut, and all that good stuff. In other words, it's able to reproduce colors accurately. More in line with the way the director/game developer/artist intends the picture to look.

The new consoles will support 720p just fine, so the easiest thing to do is just set the consoles at 720p and go about your business as usual.

The current consoles can handle 1080p.

Wipeout HD on the PS3 runs at 1080p at 60fps, I can't wait for the majority of games I play to be like this. Playing other titles at 30fps, you can easily ell the difference.

I wouldn't hope for 1080p and 60fps simultaneously out of the PS4 or Xbox One.

You'll get one or the other, but I doubt you'll get very many titles that do both.

There were a few PS3 games that supported 1080p 60fps, including one I made. Launch titles will be 1080p30 or 720p60 but I fully expect 1080p60 as the norm in a couple of years.
