For any of those developers or other people who managed to get their hands on 10.9.1 beta 2 (release on the 21st), I'm wondering if it resolved any of the Finder responsiveness issues or random beachballs?

I never had the problem in the first place (so I cant tell if beta 2 had any effect on it) but here's the fix:

I don't think I've seen any 'random' beachballs but I was only seeing those in Chrome and while playing a few steam games to begin with.

How does that compare to your 10.9.0 experience? Were you getting a longer or similar delay?

it is less than 10.9, but I never really had long periods of beach balls anyway

Never have had beach ball issues but the QuickLook and Gmail problems are still there.

Me too, but occasionally reappear and it must be ultimately resolved in future updates. Eventually, it's a MacOsx ;)
