And can someone explain to me how the Apple Care works if I buy a used iMac/iMac Pro that still has valid AppleCare+? Is it tied to just that iMac, and not the person, or?
 
AC+ is tied to the serial no. The seller has the option of "selling back" the balance of AppleCare to apple, or they can leave it as is and it falls to the new owner.

As for buying something used, it's always the same whether it's a computer, a car, or a house. Consider the seller. Do they seem like the kind of person that takes care of their stuff? Do they seem knowledgeable about the item, and can answer basic questions about it? Is it clean and undamaged? Is the price realistic? And so on.

you could ask for the serial number and then do a coverage lookup to make sure it's covered.
As for refurbs (which I always recommend) that might be tough. I don't think there is a secondary market for Apple-certified refurbs. I guess sit tight and keep saving ;-)

I find a few good used ones in Austria/Germany, and it's not about the money. What bothers me is that the new models might be coming out very soon, and I would hate to buy a used, or even new current model if it's not for a really low price, considering the new models might be just around the corner...

Guess I'll get a 16 inch Macbook Pro and just see what happens with the iMacs.
 
What you need to take care of when buying a computer with AppleCare+ Is that the seller could, a month or so later, contact Apple and get the remaining of the AppleCare+ refunded......

Not sure if there is a way round this, or whether you can contact Apple and inform them you are the new owner?....
