Whenever I plug my iPhone into the computer Aperture launches and wants to import my photos in. Is there a way to stop Aperture from launching just because I plugged my iPhone in?

The iPhone (when it has photos in the camera roll section) appears as a camera to whatever application you have set to open when a camera is plugged in.

The quickest way to stop it is to import the photos and get them out of the camera roll.
