Why would the average consumer who dabbles in media want/use:

Aperture instead of Photoshop
Logic instead of Garage Band
What does Toast offer for burning that OS X doesn't?

Addendum: how is iLife 9 better (or not) than previous versions?
 
Can only answer for Aperture. It is not used instead of PS but with it. It is a batch photo processing and organisational image programme which stores a photo library. PS can be accessed seamlessly through an external editor link.
