Any way I can avoid this? It keeps putting everything back into the first page even though I have a bunch I want to keep on the second page. 🙁

App icons keep reorganizing themselves each time I sync

Go into iTunes and click the App tab.
Click an icon and reposition it where you want it.
Upon next sync, they'll go where you want them. And stay there.
BTW, you can move icons off the "shelf" at the bottom of the screen AND have more than three icons if you wish.
