I currently have a 15" Macbook Pro quad core and I want to get a smaller laptop for the sake of portability. I'm almost always connected to an external monitor.

The crux is that the smaller laptops are only dual core as opposed to my quad core I have at the moment. So I'm looking for an app that will track the multi core usage over time, like a week or so. I want to see if I actually use those extra cores in my day to day activities or if they are wasted on me
 
I doubt that you would see much. Any more or less modern macOS app will automatically spread its work over multiple cores, so will the OS itself. A more interesting question for you would be whether the total utilization of your current CPU goes beyond what the dual-core can offer, and that is a very non-trivial thing to analyze your n such a general scenario.
