I have quite a few apps that I open at login that I like to keep track of with icons in the menu bar. The problem is I've run out of space and the notch gets in the way, so quite a few icons are not showing. Is there a piece of software that can allow me to put a little drop down button in the menu bar that shows all the icons that can't fit in the space? I've tried ICE but as far as I can tell it only shows and hides everything, so doesn't really help in my case

You can configure what & where it shows/hides, just like Bartender. I use ICE on my laptop and hide virtually everything in the menubar.
 
+1 for Bartender. There were lots of justified concerns with the way the app was sold by the original developer, but it’s being regularly updated and, in my view, is the most complete menu bar management app.
It was actually the new owner/developer that nobody trusted. They changed some things right after they purchased the app from the original dev and didn't tell anyone. That's what got everyone irked. They came clean fairly quickly, and it was largely overblown, but the damage was already done in most people's eyes.

I used it for years and was happy, until (I forgot what OS version broke it, might have been Sequoia?) when it had all sorts of issues for a while. An update fixed it eventually, but by then I had given up on it and moved to ICE.
