So I haven't seen an app update in a couple days, looks like they are automatically installing... I have automatic downloads shut off in the settings for everything.

Any idea why else this would happen?
 
Perhaps they updated on your computer and synced via iTunes.

Don't think so... If you look at the updates page it doesnt even show a list of what's bedn updated. But apps that were updated today when I go to them in the App Store show they are installed already.
 
If you have updates off you shouldn't be having an updates installed.

Having said that, it seems the devs of a lot of apps have not done any updates. I've barely had any. The main apps that seem to still get an update here and there are ones like Facebook and Starbucks.
 
No idea. My update list shows 18 apps updated in the last two days. And probably close to half of my installed apps have been updated since the week that iOS 8 came out.

Have you updated to iOS 8? I kept my iPad 3 on iOS 6, and most of the updates that show up on my iPhone don't appear on the iPad.
