I have had my AirPods Pro 2's replaced last summer using AppleCare. First time using AppleCare and had a great experience, quick and easy.
My AppleCare is renewing this month and its a no brainer to renew it.

My question is this, if my APP2's have issues down the line, do they replace with the another APP2 or the new APP3?
Apple no longer sells the APP2's thats the reason for the question. I haven't tested the 3's out and I have read mixed things.

Thank you in advance.

“Eventually” you’d get a newer model on an AC+ replacement but normally only after the device is Vintage (I.e. 5 years after discontinuation).

It’s certainly POSSIBLE before then, due to shortages as @Apple_Robert said. But rare.
