Keep chipping away maybe someday we'll be able to force Apple to allow other app stores and side loading

You bought the hardware and then readily agreed to the software license when you set up the phone. It’s that software license you have issues with with.
I am sure some tech savvy person could show you how to remove that software and replace it with something more up your alley in desired control.
False. It is not the software license, it is the App Store nanny rules that do NOT apply to any other computer. The App Store rules are not any part of the hardware purchase. The App Store are an arbitrary menace that needs to be struck down.

...which wasn't shown to you when or before you bought the phone.

That's why the license isn't enforceable in many jurisdictions.
And such classic bait & switch really shouldn't be.
Pretty sure I have bought hundreds of games/software titles that have a license agreement that I am not able to review before I buy them, and if I want to use said software I have to agree to their license agreement.

Yet, any person who isn’t a mindless ghoul would/should understand that nearly all hardware that comes with preinstalled software comes with a license agreement that you can’t review before hand. That’s how things work in our world .

as an aussie i look forward to seeing how this pans out. But have no doubt in my mind that it'll be 2029 before i see any changes.

The problem here is that when I buy an iPhone, even though I paid for it, it is not really mine because I can only install Apps that Apple approves of.

Kind of like buying a car and only being able to drive it to certain locations approved by the car manufacturer. Of course, the car manufacturer would be protecting the safety of kids so that is alright? No! No one would accept that. And there is no reason to accept Apple's shared ownership claim of the phone I purchased.
and also takeing 30% of any paid parking fees and 30% of each toll paided
