Does anyone know what the apple employee discount is and who it applies to (ie. do retail employees get it)?

All Apple employees are eligible. However, Apple employees are not allowed to talk about their discounts, as part of their employment contract.
 
Retail employees do get a discount; I'm not sure how/if it varies from that of other employees. If I recall correctly, it's pretty good (better than the developer discount) but the really good parts are limited (x number of discounts per year).

Here's a run-down of product discount benefits for permanent employees (full-time and part-time) as of late 2005:
an on-going 10% discount on anything in the store
a once-per-year 25% discount on a complete system
three discounts for friends and family per year of 15% off a complete system
deals on product models Apple is discontinuing prior to new product introductions, and overstocked items before the end of each quarter
occasional employee discounts or rebates on third-part products
a quarterly bonus if the store achieves its sales quota, $500 for part-time and $1,000 for full-time employees

it's all conjecture, though. 🙂
