Hi, have a tough time and need some help. I gave my wife my old iPhone and I got a new one. We signed out my Apple id from her phone and she signed in with hers.

However when she did this it changed on my new iPhone also. So her Apple id is now on my new iPhone.

So I went into my iPhone, signed her out and then signed in with my Apple id, and sure enough it changed on her iPhone also.

What I am doing wrong and how do we separate the two?
 
This doesn't make sense to me at all.

When my wife originally got an iPhone, we quickly just signed in with my Apple ID. Well this doesn't work if you want to do your own iMessage via Apple ID. So she got her own ID and since then we were good to go - no iMessages going to the same person. We've also created an Apple Family plan where we all have our own Apple ID but share paid apps, etc...

I have changed my main Apple ID from one email to another - but for the change to be visible, I have to sign out, and sign back in on all my devices.

Your explanation of an Apple ID changing on a different phone when you do something on an entirely different device is, from my perspective, impossible even if using the same Apple ID on both iPhones. Signing out of iCloud on one device will not sign it out on another - and it's impossible to change the Apple ID on another device by signing out of it on a different device.

Weird issue.

Make sure you don’t have both phones with the same name. Settings/about/name.

If you still having troubles, sign out of Apple ID on her phone and reset to new.
 
I would log into your iCloud accounts from a computer and make sure the phone isn't listed in both of accounts. If it is make sure to turn off find my iPhone and then delete it from your profile.
