It will be a year to a year and a half until it is safe to go into a store. I think it is a bit early to be talking about this.
Well I spilled coffee and 'fried' my 2016 MacBook Pro; so zero value and got a new one yesterday IN the store... all very organized; handful allowed in at one time; and a week's wait for a genius appointment; which I had schedule days ago and diagnosed my old one as a boat anchor.. looks perfect but won't boot up.

The new one look identical other than the new keyboard; and it's much faster (higher end with the 10th Gen quad-core I-5); totally please even if didn't wish to spend 2k again. What's unique was the easy migration as I have a perfect Apple Time Capsule, and can't believe they stopped making those. It did the job; didn't have to re-enter email passwords or anything.... great product.
 
I was curious what trade-in value for my 2018 £3008 MacBook Pro would be.

I’d have to add £29 if I wanted to use that trade-in value towards a base iPad.

WTF!
 
Just like trading in a car at the dealership, you'll always do better selling privately. Trading in is a convenience service that is worth it for some people in some circumstances for some devices some of the time.

There are other companies that do Mac trades to compare your Apple trade-in quotes. In the US a couple that are popular here are CashForYourMac.com and MacMeAnOffer.com. Sometimes they're higher, sometimes they're lower than the Apple quote.

Apple's trade in will net you like $420 for a 2015 iMac and other sites will toss you $800.
 
So I have a 16" 2019 MBP with 64GB RAM, 2TB SSD, and AMD 5500. Out of curiosity, I checked what it would take to upgrade just the GPU.

To get the exact same but with a 5600 would cost $4000 CDN after trade-in (plus a ridiculous amount in tax). They are offering $2200 as trade-in value. Meanwhile, on Kijiji, it's listed at $4500 (which is still $2K below the retail price for those specs...) They are making a killing on these trade-ins.

CashForYourMac has offered higher trades for the stuff I've gotten quotes for, so MMAO isn't always the highest, but of course it's good to check both. I like CFYM's insured Fedex shipping, multiple payment options including an Apple Store gift card, and exceeding my expectations for fast turnaround, and fast email responses. I got a couple of quotes from MMAO but found the process a little awkward. They simply email you a PO; there was no mechanism for actually accepting the offer other than shipping your device. Guess I just prefer the way CFYM provides quotes and its end-to-end process.

I've always sold my stuff on Gumtree easily for a fair price. You always get offers within hours of posting any Apple product. Some are low-ballers but you just ignore those. Or state that your price is fixed.

Apple's "service" is just offensive.

Well... I've got a Mid 2009 Macbook Pro... given it is likely just at an age that's good for recycling, at least they get it off my hands(?) I'll just keep the stick of RAM, and HDD, because you never know, might come in handy.. and they're easily removable.

Heinous, my early 2008 often rebuilt by me is maxed out with a new SSD and 6 GB RAM. I'm sure they'll give me $500 for it, right?

No, they'll just recycle the machine for you. You can go through purchase of a new laptop on the site, enter in your old serial to see what they say they'll give you. Just repurpose the SSD and RAM if you can I suppose. I've got an old mac mini I use for my TV that can likely use it.

Apple trade in issue
Traded 2017 MBP, valued at $760, in perfect condition for Ipadpro. All went well and I loved the ipad until I got an email stating my trade in value changed. They dropped it to $260 claiming the screen was delaminating. The screen was/is in perfect condition! Contacted apple, they REFUSED to help and insisted I contact Phobio. Phobio website says to contact apple for trade in issues when combined with an existing order which is the case! I reluctantly called Phobio but they refused to help. They sent a picture of a perfectly fine screen but stated there was cosmetic damage. Per request they submitted escalation to manager for a call back in 1-2 days! I would have simply rejected their fraudulent devaluation but APPLE would then charge me the full price of ipad pro which would go over my apple card limit. This is unacceptable as I am in the middle of buying a house and impacts to my credit are to be avoided at all cost. Apple chat still insisted this is not their problem. I googled this lamination issue, which Phobio says is cosmetic damage..How can an invisible issue be cosmetic? I stumbled across anapple program to replace the lamination for FREE! Had I known an apple defect that is invisible to the naked eye would cause me this much trouble I would have never done business with apple.
I fortunately came up with a work around my self and demanded a return order for the ipad which is past its 14 day period. I will return it then reject Phobio’s offer.

TLDR: A known, invisible, apple defect that can be repaired for free cost me $500 in trade in value. This was brought to my attention after the return period for the order I traded for. Apple and Phobio simply refused to help. I was lucky enough to waste 2 hours of my life just to be able to return the apple devices and wait for my macbook pro to be returned. Praying its not damaged by Phobio or in transit.

Sorry you've had a bad experience with Phobio. There are lots of posts on Macrumors about similar Phobio experiences. For Apple trade-ins it's always better to do it in-store whenever possible.
