I returned an iPhone to apple via FedEx last week and the package started to be in transit on Thursday.

Today is Wednesday (almost a week later) and my apple.com/store return status hasn't changed to neither "Received by carrier" (assume thats fedex?) or the next step "Received by Apple" - the device was delivered yesterday Tuesday. I was not expecting my return status to not update at all through this process - anyone in a similar boat?
 
It varies. Once Fedex delivers the return to the Apple's Warehouse, they actually do scan it their system as received. I've gotten my returns process on the day they received my package, while others it took longer.

Couple weeks ago, I returned my MacBook Pro and Apple shows receiving it on their system on 10/27/2020 but the returns didn't get process till 1 week later. Apple told me that sometimes they can take 5-8 business days (Weekends are excluded) for them to actually process your return after they receive it.
 
As soon as Apple receive it, the whole progress bar will just show complete. Tracking isn’t the best up until that point.

Depends. I normally save the receipt and per tracking it says delivered. Once it's delivered, Apple will scan it and marked as delivered on their system but not necessary process it right away. So the progress bar won't show as complete until they actually open your returns and starts processing it.
