How do you remove the multiple address when composing a new message ?

Where do they come from ?

What I mean is, you compose a new message, and in the TO: field when you start typing an email address thats already been used before (could be several) that start with the few characters, a list appears so you can select which one is correct.

This lists any email used before (including any ones that have been mis-typed)

How do you remove these entries? Without trashing your Mailbox and setting it up again?

While Mail is active go to the Window menu and Previous Recipients. You can command-a to select and remove all of them or just the ones you want.
