Apple Music demos?

I'm not sure if this is the place to ask
but I'm a music collector and have CDs from demos to the radio ones

and for instance

I have Natalia Kills - Mirrors on my iTunes
and it syncs on my phone
but I also have a demo of that song with completely different lyrics
which is under an album titled demos

but when my iPhone plays it, it plays the original mirrors and not the one I have on my iTunes

why is that?

It might have the same metadata. Try deleting it from your library on your phone, change the metadata, then re-add it to your iCloud Music Library in iTunes. It should upload it.
