So, I know that years ago you could sign up for iTunes Match, match your songs, and re-download a higher quality version without DRM. As far as I know this is still possible, but I also understand that this feature has been rolled into Apple Music.

My question is, if you did this with Apple Music, but then canceled, would you lose your higher-quality songs as well? I was of the mindset that music you download to a device using Apple Music, it was DRM controlled and useless without a subscription, but maybe that's different than what I'm looking to do?

You will retain what you had before you signed up for Match. You will not retain anything that you downloaded from Match that you did not possess previously.
