You won't be able to use any of the Airpods line to listen to music. XBOX has locked their wireless audio to a proprietary frequency that only works with XBOX licensed gaming headsets (money grab), which are notoriously crap sounding.
I guess you could plug some good wired headphones into the controller and carry the XBOX controller around in your pocket while at home.
At least PlayStation's allows all Bluetooth headsets to sync up.

 
The question is… Does the Apple Music app on Xbox Series X/S support it, though.

For some reason it doesn't. I do not know why

But hey I don't use Xbox because PC Master Race soooooo...yeah.

Tbh does any Apple Music app aside from the ones on Apple devices support Dolby Atmos?

Oh it exists. It's just run by Panos Panay now who by his own admission just copies whatever Apple does. For a brief shining moment it was run by the Azure team but now it's just an ad platform that looks kinda like a bad imitation of macOS.
 
Cool, though I found the third party AirPlay app for Xbox has allowed this for years now already. As long as you have a device to AirPlay from. AirPlay has the advantage of allowing you to control the music from your phone while gaming, adjust volume too.
 
No the Apple Music app DOES NOT support Atmos.

The app for Xbox supports music videos in up to 4K resolution but does not support Dolby Atmos music and lossless quality, both of which are supported for Apple Music on the Apple TV 4K box.

At this point there isn't gonna be a Windows app. The death of iTunes is a selling point for macOS that is getting PC users who own iPhones to switch to the Apple Silicon Macs. "Hate iTunes and want easier file transfer with your iPhone? Come to Mac then"

It got my dad who used to be a hardcore Mac hater since the 80s to switch to an M1 Mac Mini because he wanted iTunes gone that badly. Plus he loves Apple TV so having a dedicated app makes him happy.
Well, if there is no Windows app I'm not gonna sign up for Apple Music. If Apple want to be taken seriously and grow their subscribers to compete with Spotify they need to do better on Windows than iTunes or a broken web player.
