So, you know how Apple Music allows you to add a song to "My Music" and also "Make Available Online"? Well what happens to those songs if you end your subscription? Will they still be there on your iCloud Music Library forever and you can still listen to it whenever you want? In other words is it legitimately a downloaded song that I can forever access?

No. If you cancel your subscription you will lose access to all songs you do not own (ripped, bought from itunes or other services etc).
