Folding does not change overall size, thats true but it allows smaller devices to enjoy bigger displays. Currently, there is no way you can fit 10inch size iPad in your pocket or small purse. If it was foldable, that would have definatly be an option. Smartphones got bigger over the years just because people wanted bigger screens, not because they wanted bigger phones. Foldable dislay technology could change that.That's the only logic solution when you want to fold the screen on the inside. The real problem on folding devices is maintaining a proper bend radius on slim devices. That leads to the necessity for a retracting support of the display in the bending area. As I developed a solution to that problem myself, I can certainly say, there's an easier approach to this that is much simpler, solves another problem of bendable tablets, but requires the user to "lock in" the unfolded device. If the device doesn't need to be symmetric, it gets even easier.
That said, when we talk about bendable OLED screens there as a lot more options than just folding a screen.
However, I doubt a device with a bendable screen will ever have the feeling of full size solid screen like todays tablets. Last but not least, screen size is overrated. There's scenarios when a larger screen certainly is better, but if screen size was that important, where's my 17" MacBook Air? And that's where I draw my conclusion: It's not the size of the device but the weight and volume that contribute to mobility. Folding does NOT change that.
Now if we take the iPad Pro and fold that ending up at half the length but double the thickness, less battery and a lot of mechanics that can fail, what's the point? That women can fit a 15" tablet in their purse?
I'm actually assuming they won't even try. Not with a real product. Not beyond a prototype.You are assuming Apple will get it wrong like Samsung and everyone else.

No, because Apple makes dozens of products. Patent trolls are "Patent holding companies", who sue companies that make products.
