I tried AdGuard but downloaded it from their website and not through the app store and it wasn't good at all so I trashed it and went to the app store and downloaded 1blocker. I have block ads, block trackers, custom rules and the 1blocker button activated and so far it's working very well.
It's just that darn spinning beach ball half the time I click on the bookmarks menu

How many bookmarks do you have? Also, it helps to keep bookmarks nested in a folder inside a folder. The top-level folder will show when you click bookmarks menu. If your bookmarks are residing at top-level, it’s going to be a pain as the menu tries to load them all.

I cleared away a lot of bookmarks and I don't have many at all.
This wasn't an issue before, ever. Big Sur for some reason has an issue with drawing small favicons quickly. There is something amiss

Hm, strange your AdGuard didnt work. But from the way it sounds, you downloaded the full Mac OS app, not the Safari extension. (even though the app worked flawlessy for me, but it was on trial for 14 days before it'd need a subscription.)

About the bookmarks menu, I'm not sure. Maybe your list is big and it needs time loading them, or some links are broken inside. So it might be worth checking all of them. Or maybe try exporting them (or find their folder in Finder) and then import them back.

Edit: Oh wait haha, I didn't notice there was a 2nd page and that you answered a similar question to mine.
But maybe this export -> import back thing still might help.

Nope, tried it all, still an issue. A lot of others have it as well so maybe it's a graphics card compatibility issue.
 
I'm now using this new STP as my daily/default browser, and generally feels great. (Previous build had basic issues, like not maintaining pinned tabs) but this works well. Occasionally, Command-W won't close a window, but if I Command-T to open a new tab first, it does. Minor inconvenience. Has anyone had serious trouble or bugs?
 
Well, that didn't help at all and you basically ran away but I found a solution.

I have no idea why Apple took off the reset option in Safari, because that's what solved the issue. My bookmarks were still there afterwards which surprised me.
Download CleanMyMacX and you can try the Free Version first to see if these options are available, if not you can upgrade-it's about $39 but worth it, IMO

Follow these instructions to reset safari after doing the scan offered when you first open the software:.

CleanMyMac -> go to CleanMyMac X Preferences -> Ignore list -> Uninstaller -> Disable "Ignore system apps" -> go to the Uninstaller module and select Safari for a reset.

When you are in the Uninstaller module, please hold Control button on your keyboard and click on the Safari, then click on Select "Safari" for Reset

You can even trash random scraps that were connected to software you un-installed.
