My watch still hasn't done the last update. Just an endless loop of "Unable to check for update" or "Update failed". Updating watch OS is the worst experience I've had with any Apple product. It just doesn't work.
Agreed, I typically love updating my Apple products but I always dread it with the watch. It's too dependant on the iPhone and doesn't have enough power to make stuff streamlined.
It's a shame that a device that not even 4 years old, is already not being supported...
The watch is a lot less powerful than iPhones though, it is certainly sad that it's losing support after such a short amount of time but we wouldn't want a repeat of the iPhone 4s with iOS 9.
I don't run anymore, but on my bikes, I always use a dedicated HRM. I guess I've avoided this issue. Back in the day when I did ride, I didn't have much of a problem, but that was years ago. Things change, and hopefully for the better. *shrug*
I've been having the same issue. My walks track fine but biking never does. I've started using the "Other" option for a workout when going on a bike ride since that actually credits me my minutes.

They’re not pink they’re actually red if you do a close up of that picture. Nonetheless they’re still weird, the actual California face doesn’t have red hands on it.
 
Had the same issue. I started the update in the settings of the watch itself, not the watch app on my iPhone, and the update went through.
