Could I go into an Apple retail store, buy a MacBook Pro and have then put in the 200GB hard drive and 2GB RAM? I know they will do the RAM but would they have to send it to Apple to get the hard drive done or will I have to wait for them to order the part?

They can probably do the RAM in a reasonable amount of time, but I doubt they'll be able to do the hard drive upgrade for you. They'll probably just tell you to order it online.

Apple retail can only "add" certain things. They get sealed boxes of the stock models so they have to open things up and add components.

Changing RAM configs is one thing that you need to know exactly what you want. If there is an empty slot, the will "add" another chip of whatever size -- but to the stock model. If it comes with 2x256MB and you want 2GB, they will take out the 2x256MB and put in 2x1GB. So you pay for the smaller chips and don't use them. It's much cheaper to do custom configs from the online store unless you are adding RAM to empty slots.

they'll do the RAM there and then, expect to wait about 45 minutes.

they should give you the RAM you are replacing unless you are adding to an empty slot.

they should have different hard drive configurations in stock (Apple Store) maybe not if you are buying from a reseller.

You can order the system with a bigger hard drive at the retail store (I believe), but they will place a custom order basically through the same online store that you would go through at home. I've only heard of RAM upgrades done at the store.

The Apple Store at Mall of American in Minneapolis told me they wouldn't do a harddrive swap, that I should order online if I wanted a CTO (except for adding ram, which they would do). The only exception was if they happened to have a unit in stock that had a HD upgrade.

I've generally ordered online, since shipping is free, I can conigure it as desired, and I don't have to drive! If they'd let me open the box, to test for dead pixels, that would make me buy at the store .....
