I have never mentioned a concern relative to the government or law enforcement.Correct. If the government wants your data it will get it. If that is being called "limited" then that is correct. Apple, as google and facebook, takes law enforcement requests seriously. Apple never intended to protect your PII from lawful requests law enforcement requests. If one is concerned, don't use icloud backup in any way shape or form.

My basic point is that Apple is not very transparent about what “privacy” means, and the fact that most data on their systems really have no assurance of privacy.

Don’t think you did get it. Are there details regarding apple privacy policy (hint:yes). Is there a master list that details the information apple has on you. (Hint:yes) Can I absolutely guarantee every single piece of data apple has on me isn’t being sold or even what is the percentage? No.You don’t know what Apple’s official statements on privacy are or whether they’re even available to read (hint: they are), but you pretty sure they’re transparent about privacy (hint: not really) and you’re confident they’re not collecting and making your information accessible to anyone else.
