for people with SSD, do you only use it for applications and software, and then store docs, music, etc on an external HD?

If you have the room, everything on the SSD is the best way. If not, many people store music and large data files on a platter drive in the optibay or externally.

Just wondering because when I get my MBP i'm debating the SSD for it. I have a 500 GB external drive to store my music, docs, etc.
