I have an evening reservation for after work, but I may be able to go during the work day. I wonder if they would take me that many hours early or if I can change my appointment.

On launch day almost certainly not. There are no more appointments available for launch day and they only take a certain number of people every 15 minutes. If you show up more than 15 or maybe 30 minutes early they will tell you to come back at your appointment time, especially if your store is a very busy one.

However, it is worth noting that they do allow you to come any time after your appointment window for up to two weeks. So in the future the best plan is to get an early appointment. If you can make it, great, but if you have to go after work, that’s fine too.

Ah, didn’t realize that booking earlier in the day is better to allow pick up any time after. This is my first time doing an in store order since iPhone 3G.

But your point about appointments for launch day is dependent on which store. For example, my local store still has nearly the entire day open for pickup windows. I’d cancel my order and reorder just to change the window if I didn’t do it with my carrier trade in.

Wow, it surprises me that any store still has open times available. You could try to call Apple and see if there’s a way to switch your time without canceling and reordering, but I don’t believe that there is. If you check the appointment times on launch day and it still looks pretty open then maybe you would have luck showing up early and seeing if they’re willing to take you then, but be prepared for them to tell you no.
 
I've always done a trade in/pickup on the upgrade program, so that takes a bit longer than them just handing you your phone and you being on your own, but yeah, either way, they have the logistics of it all down cold, and it's very organized.
