Finally got spousal approval, but now can't find anyway to buy online and pickup at my local Apple Store. There is no "check availability" for any phones, accessories etc, the only option being via shipment.

Is this the same for everybody or is it a (hopefully) short term glitch?

Depends on availability at your local store. We have 5 stores nearby so usually one of them will have what I want. If an item is not in stock you can always call your local store and ask them when they expect it to be available.

This isn’t about availability. The option to check for local inventory isn’t there right now. The ONLY option is for shipping. It’s the same for any product listed on Apple’s online store.

I’m guessing glitch, but was wondering if someone could check to see if they get the same thing.

I believe once in a while they disable this (possibly for maintenance). Happened last year and the few years back. But they always come back on Monday.

This happened to me 2 months ago when I was visiting Portland, Or. for work. I wanted to pickup an XS Max at the Apple Pioneer Place location to benefit from Portland being a tax-free state and there was no availability for pickup. I tried different items to add to my cart and no inventory on any item, even laptops. I walked over to Apple and it turned out it was under renovation; closed for 1-week. If you check store hours for your store location and if it states closed, maybe its all due to renovation.

The issue was never about actual store inventory. It's that the option to pickup an order at a local store for online orders was missing. I thought maybe they took away that option permanently. But it was as @Shadowbech said, it was a one day outage. It's back today.

Odd that they didn't specify the temporary unavailability on the order page though.
