So lets say I buy an unlocked iPhone 11 outright this year, but do the monthly installment plan for AppleCare+, what happens with the remainder of the two-year iPhone monthly payments next Sept when I get another unlocked iPhone 12 (because I know I will) and trade-in my 11?

Will I be able to "cancel" them? Or will I be on the hook for the remainder?
 
You can cancel the monthly Apple care or get a refund on the unused portion of paid in full Apple care.
 
If you’re planning that then why not just get on to the IUP?
My employer pays for my phone plan (AT&T), but I don't "own" the account, so I can't do IUP - I have to pay in full.

So I'm basically in a situation where I pay for my own hardware, but my line is part of the giant corporate account
