I've just ordered a new Apple TV 4K 64GB and am surprised to find that the delivery is 3-4 weeks out - they are currently estimating Feb 26 - Mar 5 (I don't live close enough to an Apple Store to simply buy one and pick it up, but they are in stock if I wanted to spend the day driving back and forth to get it).

The 32GB has 2-day delivery.

Not surprised. 64GB has been a significantly lower selling unit than 32GB. For most of us, 32GB is more than enough, but if you use a lot of games on the ATV, 64 is probably a better choice because games tend to store more data than the simple streaming apps.

I think I read somewhere that over 90% of the ATV4 units sold were 32GB. So, they probably stock minimal units and build to order on the web store.

I got a 64GB unit because I like several of the games on the AppStore. Also, should I need to rewatch a movie, I know it most likely will still be stored from the previous download and be there to quickly view it.
