Does anyone know if it’s possible to display the Apple TV 4K interface in the CinemaScope aspect ratio (2.39:1)? When hooking up the Apple TV to a cinema projector it’s displayed pillarboxed with a 16:9 ratio (the standard for TVs) which is what it was made for (home viewing). I believe the projector has an overscan feature so it would take up the whole screen but would cut out some of the picture. With this feature on though, content in the 2.39 ratio would look fine with nothing missing, correct? Any help or insight would be much appreciated!
 
Last time I checked that wasn't possible other than via external solutions such as Lumagen processors.
You might have more luck with 3rd party applications doing this.

What's your setup though? You have a scope screen and a scope projector (Barco, etc.) as well? Or a scope screen and regular 16:9 projector? Shouldn't the latter configuration display the interface full width and cut off top and/or bottom instead of displaying it pillar boxed?

Thought the native resolution of Cinemascope was 2:66:1, reduced to 2.55:1 when stereo was added?

I don't have any problem playing it on my Apple TV OLED via Plex. Would the Plex output/result be different on a projector?

I don't think that's issue. Your OLED TV has native 16:9 ratio, so you get black bars on top/bottom on scope material. OP has a 2.39:1 format screen, so no black bars on top/bottom. You do then project a 16:9 source into that 2.39:1 area and as a result you have a constant height, but variable width screen just like in a cinema.

I work at a movie theater, so I have access to a Sony cinema projector on a scope screen. We just wanted to stream things through the Apple TV but it doesn't extend to the full width of the screen. I'm assuming it's just not natively possible as the ATV was made for being viewed at home on a 16:9 screen.
 
It won't extend to the edges of the screen because 2K professional cinema projectors are 2048 x 1080 and 4K projectors are 4096 x 2160.
True, but a resolution of 3840x2160 (the Apple TV 4K), should take up a little less than 94% of a 4096x2160 projection viewing space correct? However when plugging in an ATV it looks more similar to this image below of a flat (1.85:1) picture on a scope screen.

If you want to display a scope ratio movie full height on a scope screen, you will need to zoom in on the image. This is probably the "overscan" feature you are referring to. This will cut-off Apple TV menu information but shouldn't affect the movie.

In DCinema, all images are stored "flat" (non-anamorphic, square pixels) regardless of their aspect ratios. The two standard aspect ratios, which you show in the image, are 1998 x 1080 (for 2K flat; multiply each by 2 for 4K flat) and 2048 x 858 (for 2K scope; multiply each by 2 for 4K scope).
