If I have Apple TV 4K + Stereo HomePods (Gen1) and enable Home Cinema, will only supported content play as Surround Sound or All Content?

It’s all content as long as they’re set as the default speakers.

And does it need a special kind of HDMI cable or TV?

HomePods are wireless so they can’t use HDMI. You need a HDMI for 4K and HDR. This is the cable I’m using now. If  ever activates 120Hz on the 4K 2nd Gen then I’ll get this cable. If I were shopping for a cable now I’d get the latter cable from the start.

Yes it works absolutely fine for the 2017 4K. The only thing you can't do with the 2017 4K is use the HomePods for other devices connected to your TV via ARC/eARC. That you need the 2021 model.

The ONLY reason I upgraded to the 2021 model from the 2017 was to use my HomePods with other devices via ARC.
