I'm planning on pre-ordering the Apple Watch 7 Friday. How do trade in's work when you pre-order? Can I trade in more than one Apple Watch towards it?

In my opinion, if you have an Apple Store close by, doing the trade-in in person versus sending in to Phobio would be the better route. Your Apple account will be credited and you can then use that amount towards the purchase of the new watch or, use the balance for other future purchases.

Only one trade-in can be done when it is attached to the order. You'd have to do any other trade-ins separately and just use that gift card balance on a future order.

I wonder what my series 4 stainless is worth to AT&T? I guess I'll find out Friday. Probably not much. I'll probably gift it to a friend of mine. Though, that friend, who has a series 1, is really enamored with the new 7.

If you preorder on friday, do you have to say yes right then that you’re trading in old watch or at anytime after ok?

What I did on the 13 mini preorder was pay in full and then on launch day, I picked up my phone at the Apple Store and while I was there I decided to do the trade in and get a gift card which I then added to my account. You could do the same kind of thing with the watch.
