This really is ridiculous. I have it telling me to stand and move while I'm up walking around (and have been for minutes to hours) or it will tell me to stand and I do, walk around for 5 minutes and STILL can't get it to detect my motion! So incredibly frustrating.
It has to be a defect in your watch. Some people complain that it tells them to stand when they have been standing for an hour but they never moved or walked more than a few steps.

My watch tells me to stand if I haven't in the first 50 minutes of an hour. If I walk around for 20 seconds (maybe less) it tells me Good Job and marks the hour off. I've even tested it by moving my arms for 20 seconds without getting up and it works.

I've stood at a bar for an hour and it asks me to stand and they would be correct. Maybe they should say "stand or move dummy" ;-)

Yours sounds like a flaw unless you walk without moving your arms or stand still. But, after reading what you wrote, I would say your watch is defective.

I'm at the office early today and at 6:50am it told me to stand. I got up and walked to the break room and before I got there, it said good job you did it. About 15 seconds actually.
 
Honestly, I am quite suprised that many people think the stand feature is measured by movement, because its wrong.
The Apple Watch notices the stand when you let your arm hanging.
Next time when the watch tells you to stand up, leave your arm hanging so that the digital crown is facing to the floor for 1min.
I'm not saying that you should cheat standing up, because that would be quite dumb and unhealthy, but it is a good example of how the watch detects the stand.

Edit: The reason why it didn't recognize you standing up was probably because you were holding something in your hand, (or) (so) your arm wasn't facing downwards.

Maybe it is both? The next time your watch tells you to stand and you are sitting in a chair, just move your arms up and down but never break 90 degree angle and it will say you stood. Not once did my arm go down vertically. I can move them up and down two inches and it works.

Just a FYI... OS2 beta 5 seems to be more sensitive to movement that wasn't being registered before. If I walk to the mailbox which is 75 yards away, when I get back, it registers 2 minutes of exercise and some calories when before it never budged.

Update... Just got an alert to stand at 10:50am and stood for 2 minutes with my arms at my side... Nothing. Walked to the break room and 15 seconds later said I did it.
