Should I turn off iPhone fitness tracking if I use an Apple Watch? Which data are flowing into the Health app if both they are tracking steps and other stats?

I can't speak for the OP, but I have five and label them accordingly in settings to differentiate which one I am using when paired.

Ever time you re-pair Apple adds a 'new' watch and you can't delete the older entries since it will delete all the data too.
