So it’s for tracking purposes, either manually or by some 3rd party device. Health app for example lets you track blood pressure and the AW can’t do that.

Exactly this. It’s really just a tag that can be applied to a database entry. You’ll find a great deal of such if you go to Health => Browse and start clicking. For example, “Other Data” has the option to track some very intimate activities that one really, really hopes the watch never gains the ability to automatically monitor. Or even just body measurements — how is a watch supposed to get your waist circumference, let alone vision prescription?
I would expect that there’s likely an app which is intended to assist in tracking symptoms which will manage maintaining night sweats records for you — but, if so, it’ll work by prompting you in the morning to tell the app about it, not by automatically figuring out if you experienced them or not.
Even if not, and this is something you’re concerned about or that your physician has told you to log, you can always manually “add data” (upper right corner) rather than scribble something on a notepad.
