I'm assuming it's just like the phone not upgrading phones keeping 6S plus but want to get the watch should I set alarm for 3am or know need to hurry it won't sell Like the phone 8-9 am eastern will be fine

I don't think the demand was huge for the Apple Watch (2 years ago) as much as there was a supply shortage. You can never know the supply.

No. The demand was high and the preorders were through the roof. Yes, Apple wasn't sure with the supply constraints, but the Apple Watch preorder was huge.
