Just sharing my similar experience. Reboots 4-5 times in succession on a run, low battery signal in between, stabilizes to 10% battery (from 95%). Was on with Apple Support (chat, to senior technician), was offered a replacement that was somehow denied at the store. The store send the watch to the repair center, who reported that everything was working just as it should! So a lot of time wasted, including going into a mall during COVID lockdowns, all for nothing at this point.

Similar here, AW replaced, no problem since.
 
I started having the same issue with my Series 4 LTE several months ago. In the past week it rebooted 5 or 6 times during a run, and the same number of times on a walk after wiping it and setting it up as a new watch. Both times I was using the Apple Workout app, but it has happened many times using WorkOutdoors too. I suspected it was a software issue and the discussion on this thread appears to confirm that. It’s frustrating because the reason I got the LTE model was to stream music while running. I'm thinking about upgrading to a Series 7 when it comes out and will probably just carry my phone on my runs to get through until I decide on whether to get a 7.

If you read carefully my messages, you’ll see that the problem was not software, but hardware. My AW was changed by a brand new one and, since, no problem at all.

What model is the replacement?
 
As a follow-up to my previous post, I have now apparently had too many support interactions for my Watch Series 3: Its battery health was over 80% and so Apple declined to service the battery; however, they did offer an Express Replacement under the still active AppleCare+ plan. The replacement Watch has a battery health level of 100% and works flawlessly on my short runs while streaming music and podcasts. So I am hoping that's going to stay this way.
