Bonjour, I'd like to buy an Apple Watch Series 10 for Xmas for my wife to replace her old Series 3 (she wants to buy an SE4 iPhone when it will available next spring to replace her iPhone 7). I know that Apple recommends an iPhone X (or newer) for the Apple Watch Series 10 but I was wondering : Will the watch Series 10 work say like her old Series 3 with her iPhone 7 (thus I understand some newer fonctions won't)?

No, it won't work or pair at all. Series 10 comes with watchOS 11...which requires iOS 18...which the iPhone 7 doesn't support.
