I have had an Apple Watch Series 4 (GPS only) for a year now and I just got myself a new Series 5 Stainless Steel. For some reason, this one lags a little more than my Series 4, which is quick as lighting. Not that the Series 5 is slow by any means, mind you, but it does take a half second to load the main app site or the complications/notifications of the Siri watch face: with my Series 4, there was no load time whatsoever. Anyone else experiencing this?
 
The only lag I noticed was when I had always on display on. I didn’t care for it and turned off AOD. I haven’t noticed any lag since.
 
As far as I can tell, my S5 is the same speed as my S4.
There is a slight lag when the screen goes from AOD mode to active mode upon wrist raise or tap. Could it be that that you’re noticing?

My perception is that that display on the S5 rapidly fades in and fades out when raising and lowering your wrist where as the previous gens instantly flicked on and off
