Apple Watch Series 6 previously paired with iPhone 13 mini will not pair with iPhone 15 Pro. Advice please, thank you
 
Which software versions on each device?
Is there an error message of some kind?
 
17.2.1 on the 15 Pro.

How would I check the watch iOS?

Need to power on the 13 Mini to check that now

IF you transferred your old phone to the new one, AW will transfer too.

IF you have both phones active, you need to unpair the watch from the old phone, then pair it to new.

Unable to Connect to AW. Make sure your AW is nearby and on your wrist to finish pairing

to get started put on your AW. Press and hold the side button to turn it on
 
I transferred the old phone to the new. I unpaired there watch from the old one
I just this past week got an AC+ replacement phone, I transferred the old one to the new and when all was set and done (took almost 2 hrs) the new phone asked if it wanted to pair the watch, which I did.
Never unpaired the watch from the old phone

So is the watch showing a watch face or the “welcome” screen?
Does your new phone show any watch at all? In the watch app?

You’ll then have to pair it to your new phone.

Not sure what went wrong in your process but it worked for me earlier in the week
 
I just had my phone replaced. The watch had a hard time connecting and finishing pairing. Eventually, I had to update the phone, restart the phone, restart the watch. It took a while and had to be on the charger, but it finally figured it out.
 
On the watch…go to settings, general…scroll to the bottom…select reset…erase all content and settings…then re-pair to the new iPhone…again, do that on the watch, not the iPhone…
