You can get the Apple Watch Ultra 3 for $699.99 in the Natural color option, down from $799.00. There are also a few Milanese Loop models on sale for $799.99, down from $899.00.

I think the Ultra looks really good and I like its display size but its weight keeps me from buying one.
 
I have an Ultra 1 and see no compelling need to upgrade at this time. I like the dark gray color you can get on the current model, but I'm not into burning money just for a look.

Which isn't an indictment. My Ultra 1 is still a really nice watch and the face that no upgrade is warranted right now is a positive. If apple adds more features that are a "wow" factor like continuous glucose or BP monitoring then I would be right there.
 
We need a common charger for future wearables - it's frustrating enough for enough people that it shouldn't be an issue pushing for the solution

Agreed. My Apple Watch Ultra 2 was amazing and my AWU3 is amazing - one of the best devices I ever bought.
Can you tell a big difference in charging and battery life between the two? Charging is really slow compared to my last regular Apple Watch that had fast charging, and I do everything I can to stretch the battery of the ultra 2 to almost 3 days.
 
Need more sales on the official 49 MM straps (£100 RRP), rarely drop more than £10. Some Third party straps are OK, but not as good quality/feel as the originals.

I set max charging to 80%. I charge when I take a shower (usually daily). This makes me not a good test subject to answer the question. I use about 20% battery per day, so regardless how fast my shower is, my watch is at 80% when I get out.

Yes, the AWU3 seems to me to charge noticeably faster than the AWU2 when I do long travel days (rarely) - and get to a hotel - wanting to charge before I go to sleep. But I'm going off of a small data set here. lol.

I can easily get 4 days of battery life out of my AWU3 (as I did with my AWU2) with my current setup (20% usage per day avg).
