Go to accessibility and look at colour screen overlay filters. I use the red one when I'm out stargazing all the time. Laughed a lot when this was announced as a feature.
I was not able to find any such feature on any of my Apple devices, including AWU.

The red overlay isn't ideal, as anything red gets filtered out. It would be great if Apple had a "high contrast" filter that flips everything to high contrast greyscale first, then applies the red filter over that.
 
The crown turn no longer works for this in Watch os 10 because the crown turn has been assigned to apps scroll. It can be set on off or auto however in watch face settings.

This SO sucks. Major regression in functionality to lose the crown scroll to change the face color. My watch keeps turning red during the day when I'm wearing a jacket or long sleeved shirt (hint to Apple - not every place is 72 and sunny all the time), and it takes a few seconds to react. App scroll isn't something I will ever use - and they've dedicated two UX components for it (swipe up and crown).

This whole release completely borked the UX. It reset my app icon layout, and moved stuff for no good reason. Why does apple insist on not letting us customize controls.
