In another thread someone said to go into the Compass app (on the watch) and it'll ask you about the data. I can now see lat / long in the compass app but it still says Updating on the Wayfinder face on mine 🤷♂️
If it shows updating or waiting it's probably because the compass is calibrating itself. That's what mine was saying as well till the calibration was completed. I'm glad it did calibrates itself because it thought south was north and vice versa. All is good now.
I found what was causing the issue. From my iPhone, I had to go to Settings > Location Services > Apple Watch Faces and select While Using the App. That was set to Never.

Found the fix. Tap the actual orange ring (or whatever color you set it to) that is supposed to display the lat/long or elevation. It will toggle it on.
Here is the fix:
Tapping the ring merely toggles the display of Lat / Long or Elevation on and off.
My Apple Watch ‘Bezel’ display was stuck on “updating” after a day I knew it was more than updating.
Turns out Apple Watch Faces is an App that needs permission like anything else! To get the Lat/Long bezel to display the location you need to go to your iPhone. In iOS 16, do this:
On your iPhone
Settings → Privacy and Security → Location Services → Apple Watch Faces
Mine was set to “never” - change to “While Using the App” and below that toggle “Precise Location” on.
That's it. In fact - if you look at your watch face while changing from "never" to "While Using the App" and back you can see the display going from updating to displaying location to updating!
