smart move on Apple's part -- but why weren't they doing this a year ago?

Also, is Apple collaborating with Unity and Unreal developers to support visionOS on those engines?
Unity has an AVP SDK but it’s locked behind their $2K/year subscription.

yes. and a good reason why I am solely focussed on the Meta Quest.
To develop on the AVP is an AU$10k investment to get started. Meta was AU$700.

I am not investing money time and effort into a platform that wont sell.

Also, I have decided to reduce my focus on the XR. The hardware just isnt there and neither is the development software to enable creative people to successfully create. If Apple created an pro app to develop for the AVP [or just buy Unity and dedicate it to AVP design and really supported it] then I would be a lot more keen.

Suffice to say XR development is extremely difficult, and better lighter cheaper hardware is required for it to become more worthwhile. The ideas are out there to make it really magical [as it can and will be] but the hurdles are unrelenting [especially for smaller studios].

"waning interest from Apple users" No, I still use mine every day.
May I ask what’s what you use the most?
Do you use the extended virtual monitor screen for Macs by any chance?

I use mine every day also.

I think they meant waning interest from Apple users who don't actually have a Vision Pro.
🤣 I did finally try the guided live demo at an Apple Store a month ago.
It was great to be honest… the clicking and tapping I still find it somewhat lacking, but definitely can see the full potential.
For entertainment and movie watching, heck yes… for productivity, not so sure, except the macOS virtual monitor which I couldn’t try. Decided to try the Freeform thing, and it’s definitely not suited for VR, scribbling is impossible.

Apple must be quite desperate. Their typical modus operandi is to create the platform and let developers do their thing (And take 30%). That’s clearly not working here.

The cynical mart of me thinks this is just Apple trying to help Godot in order to undermine Epic and Unreal. If they were genuine about wanting gaming on their platforms, Unreal should be the first engine to team up with.
Nah guys, come on. Apple has a long list of open source and contribution projects left and right, just search for that and you will see… even things like WebKit that Safari uses is actually open source.
Can start at opensource.apple.com

This Godot endeavor goes hand in hand with an ongoing effort from Apple engineers on Blender: they have been contributing and working with the Blender Foundation for years now, committing code directly and whatnot. It actually has saved Blender on the Mac for me, because it was getting stuck on OpenGL ways while blender is moving one from it.
Thanks to those efforts, Blender is fully Metal compatible and very very performant in all its render engines like Cycles and EEVEE.
Bugs still appear, but it was great to see it come to fruition from the very first early attempts when everything would just crash on you.
